I have long been a BIG fan of the show Top Chef. I've been watching it since it's inception back in 2006. Now, more than a dozen seasons later... past winners and cheftestants have found immense success across the globe, one of them is Chef Chris Cosentino. The winner of Top Chef Masters, featured on the Next Iron Chef and Iron Chef America, this celebrity chef and cookbook author is donned the authority when it comes to snout to tail cookery with an emphasis on rustic Italian-inspired new American cuisine. While on a recent trip to Portland, I dined with some friends (including Hawaii Chef Will Chen) just 3 months after Cosentino's newest restaurant dubbed Jack Rabbit Portland opened. The food was great! Service was impeccable and presentation phenomenal. See below for highlights. The portions are huge and meant for sharing, the flavors are comforting and similar to a family meal you would see in a large family gathering, but gourmet. Highlights include the rabbit (duh), pig's head and strawberry puffs dessert.
